I'm back for Tyler Florence Fridays with Chicken Enchiladas


If you've been hanging around here the last couple weeks, you might have noticed things have been a little out of my usual routine. Okay, a lot. My youngest went to school this year and for the first time in over 11 years I am home alone all day. It is SO weird and I find it unsettling most of the time. Thankfully, Jonathan is handling the change like a pro. I, on the other hand- not so much.
Between the summer & back to school I have not been entering my favorite round ups to often lately. We have been eating, but nothing elaborate. So, last night, when I had not figured out how to cook my chicken yet, I figured I would google for a TF recipe. I found a chicken enchilada recipe that I thought sounded easy enough. (Don't try to google it now because it seems to have disappeared over night!)
WELL- apparently in my funk, I have also FORGOTTEN HOW TO COOK!!! OMG it was a DISASTER!!! Quick, call Food 911 I need HELP!!! Sorry for yelling, but I'm not kidding you, what a mess- look, it was so bad I even took pictures!




Yes, that is a bottle of wine I had to break out in the middle- I needed all the help I could get!


Cookbooks out on the floor. Because I also seem to have forgotten how to READ and didn't realize I needed enchilada sauce until it was time to use it and I had none!!

We did get a dinner out of it (and enough leftovers to feed an army) I made this much, that got only about 1/2 eaten- too spicy for the kids & hubby already ate. And had 3 times this much filing that I didn't even bother to use. It's in the freezer now. Yikes!!



Since the recipe seems to have disappeared and I don't think I can remember enough of it to write out here; you, my friends, are going to have to find your own recipe for chicken enchilada's.


I do know what I thought of the recipe. Too hot for my (and the kids) liking. I had just about 3lbs of chicken so I doubled the recipe. This used most of a 7 oz can of chipolte peppers and 2 cans (4 peppers each) of the mild green chili's. And the recipe was only a red sauce, I had in my head that enchiladas were supposed to have a creamy sauce (again, if I had actually read the whole recipe I would have known this ahead of time- duh!!) So what I did was put in a can of cream of celery soup (I had no chicken) and entire package of cream cheese (no sour cream). And I really liked the flavor of it after that.


As I said, I had no enchilada sauce, so Emeril came to the rescue with an enchilada sauce recipe. Thankfully, this recipe didn't disappear and can be found here.



End results- I will enter this into Tyler Florence Friday's round up which I am so excited to be back for. Don't think I'll be winning a guest spot on his blog with this one though!


I have learned that new recipe + school night + frazzled brain + 6th grade Spanish homework = nightmare! DO NOT try this at home! I think I'll be sticking to the simple weeknight meals and save by buddy TF for the weekends.

  3. Sorry to hear about your ordeal in the kitchen! It happens to all of us. I spent my whole Tuesday cooking one dish and I was frazzled too. They look really good though and I love spicy food. I haven't tried these yet, but I want to. I think the recipe is on food network??? Not sure.

  7. I always leave a few hours for a Tyler recipe since they are SO complicated. The enchiladas are especially tough. Which is why I turned them into a casserole (i.e. cheated). I'm sure you will get out of your funk soon. You just need to get into a groove! Either way, glad you're back at TFF.

    And PS - my kitchen always looks like that while I'm cooking.

  8. Sorry you had so much trouble with this recipe! With a few minor adjustments, it's become a family favorite for us.
