Today I should be writing something touching & sentimental. I can't. I do remember exactly what I was doing and how the day unfolded for me, as I'm sure you do as well. My babies were just babies then. My thoughts and prayers are with the families of the great men & women who lost their lives this day.
I can tell you about my first trial with swiss chard. I grew some (one of the only things that I had success with) and it looks great! Tonight I tried to cook it for the first time, with success! Yea!! Doesn't it look good??

Ingredients:
1 (1-pound) bunch Swiss chard
1 large garlic clove, finely chopped
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons dried cranberries
1/3 cup water
1 1/2 ounces feta, crumbled (1/3 cup)
Prep:
Cut stems and center ribs from chard, discarding any tough parts near base, then cut stems and ribs crosswise into 3/4-inch-thick slices. Coarsely chop leaves.
Cook garlic in oil in a 4-quart heavy pot over moderately low heat, stirring occasionally, until pale golden, 1 to 2 minutes. Add chard stems and ribs, salt, and pepper and cook, stirring occasionally, 4 minutes.
Add cranberries and cook, stirring, about 1 minute. Add chard leaves and water and increase heat to moderate, then cook, covered, stirring occasionally, until leaves are tender, about 5 minutes. Remove from heat and stir in feta.
I added the leaves and stems in all together, remember I have forgotten how to read. (originally the recipe called for currants, I only had cranberries) We really liked it, even the kids (some of them) ate it and liked it. Good thing, because I have a lot more where that came from!!



I love swiss chard and think it would be great with feta and cranberries. I couldn't write about 9/11 either. I remember that day so well, my daughter was only 6 months old then. I remember wondering what kind of world she was being born into. Very sad.
ReplyDeleteIt is tough to know what to say on 9/11 these days. I was actually two blocks away from the World Trade Center when it happened...and it was definitely the scariest day of my life. I try not to think about it now because it makes me too anxious.
