I'm glad I could put in a picture of them to liven up the post, because I certainly didn't try to take a picture of the Salisbury steak we had on Sunday. I don't know about you- but Salisbury steak was one of the "mystery meat" meals from hot lunch in elementary school. It's taken me all these years to even think about making it and even still, the idea of it kind of makes me cringe. It was good though, the gravy at least.
Salisbury Steak - from the Sogkonnite kitchen
Ingredients:
1 package of round cubed steak (mine was 1.83 lbs)
2 onions chopped
1 tbsp butter
3 tbsp flour
3 cups milk
3 cubes beef bullion
1 can cream of mushroom soup
Directions:
1. pan fry the steak on both sides. remove from frying pan and keep warm.
2. add a little butter to the pan, cook the onions until soft and semi-translucent. sprinkle the flour over and mix until blended. Stir in the milk and beef bullion. cook & stir over medium heat until it begins to thicken.
3. add in the cream of mushroom soup, stir until combined. return the steak to the gravy, completely covering. cook over low heat, uncovered, for 10 minutes.
results: very simple, cheap & tasty. If we had any (or liked them) I would have added in sliced fresh mushrooms with the onions. The meat was just okay, this was a new cut of meat for me, I was not impressed. If I make it again, I will make hamburg (ground turkey) patties instead of the steak. The gravy was delicious. Really, I could eat it over anything!
Cost Analysis: meat- $3.64 ($1.99/lb), can soup $1, other ingredients aprox $2, corn $2.50 ($6/14 at roadside stand), cucumbers in vinegar free from grandparents= less than $10 for 6 person dinner!
Even though I didn't stick to my meal plan yesterday- it still helped me. I went to BJ's to get supplies for Kindergarten & new student orientation yesterday and a couple things for us (D&D coffee- yea!!). Going in there, I was temped to buy somethings that are on my "usual" list. Oh, I need that, was going thru my head. But, because I already had a meal plan, I really didn't need it and I walked out with only the real necessities I had put on the list. Success!

I haven't made this in years, but buried in my files I have a not bad recipe for Salisbury Steak. I'll have to find it and compare it with yours, which, by the way, sounds great. There are foods that defy photographers everywhere. Ground meat and mushroom soup are at the top of the list.
