Homemade recipe for chili style tacos

As I mentioned the other day, before my Kenny Chesney obsessive 48 hours, I made up a new dip recipe that we really liked. Before it was dip, it was a new taco meat/chili dinner the night before.

1. chop 2 onions and saute in a large pot with olive oil until translucent. (I would have added chopped garlic at this time if I had any)

2. add 2 cans rinsed black beans, 28 oz can of crushed tomatoes, 2 cans corn niblets, and spices to taste. I used a lot of chili powder, cumin, paprika, garlic and oregano; and a little cayenne pepper, cinnamon, and salt. (sorry about the lack of measurements, I don't measure spices)

3. simmer all above while browning ground turkey in a frying pan. I used the package from BJ's which was about 3 lbs.

4. after turkey is fully cooked, combine with the tomato mixture.

5. serve with tortilla chips, or as tacos. We stirred in a little sour cream which was delicious.

For the dip- melt Velveeta cheese, mix in some of the meat mixture and salsa to taste. Serve with tortilla chips- notice a trend here? YUM!

Obviously, this recipe made a huge amount. But what is great about this, is its easily frozen. Then another night you can thaw it for a easy home made meal. Bored with it, change it up a bit- as itself as we had it, as a taco, as a quesadila, etc. Very versatile.

I have been reading that some of you are back to school already- not here thankfully. My kids go back on Sept 2nd which is only about a week and a half away. I am usually sad to see the summer end, I like the lack of structure of the summer, and this year will be no different. (I'm not denying that there are some moments that I need to ship these kids off- but it has not been too bad so far this summer) This year my little boy goes to kindergarten, and it's full day! They decided at last month's school committee meeting that they were going full day, as it had been half day up until now.

I am having some anxiety about this transition for him as he didn't go to preschool (it was half day, that was going to be his transition) but he has matured so much in the last 6 months or so that I am feeling better about it every day. And we are so busy in the summer that the day won't be as long & overwhelming as it would have been if he had to go from a day of ours in the winter.

As concerned as I am for him, I am more concerned for me. I have been a stay at home mom for over 11 years now, I have never been alone for for a couple hours much less a whole day! Every day! Yes, I am tearing up right now, but that will be our little secret. I do have some very big & exciting news for us that is going to help this situation. (NO I am not pregnant- how dare you even think such a thing!!) I can't share it yet, but I will ASAP!

  2. I think you'll both be fine. The house will sound deadly quiet the first few day, but you quickly get use to it. It's hard to send the baby of the family off to school. Hugs and blessings...Mary

  3. Oh boy!! Sounds like a big transition for you. I am not good at change and certainly understand about sending your baby off to Kindergarten. My baby is almost 3 and he is my last. I'm dreading the day. Maybe you can find a friend to hang out with or do something to try and keep busy. It's so hard to be a mommy sometimes ; ) My grandfather always told me that "adjusting" was the key to life. He was so right!! And=====I love your nachos. You just can go wrong with them and everyone loves them!!
