Last nights dinner I cheated and got pizza from our local pizzeria in town A1 Pizza owned and managed by the wonderful Kyros family. We had our last softball game yesterday and they brought pizza for our whole team AND the other team as well. So wonderful!!
The night before I made a lasagna from everything I could find around the shelves already. I didn't measure most of the ingredients, but I did my best to include everything I put in there.
For the sauce:
2 28oz cans crushed tomatoes
Gonsalves hot chopped peppers
artichoke hearts
roasted red peppers
sun dried tomatoes
black olives
garlic
salt & pepper
oregano
basil
All to taste
mix 32 oz ricotta cheese with 2 eggs, fresh parsley, oregano and basil.
Layer in a 13x9 pan- sauce, Prince no bake lasagna noodles, ricotta mixture, sauce and mozzarella cheese. Repeat until pan is full or out of noodles.
YUM! I love lasagna, and this was not a disappointment. I cooked to sauce too much that you couldn't really distinguish the taste of the peppers or the artichokes, but it was a good rich sauce because if all those things. I liked the addition of the black olives for a little texture.
I had enough to make 2 pans, so I froze some in individual portions for future lunches and still had some to share with the grandparents and my neighbor.

Thanks so much for the shout-out Kristin, I love your comments on my blog as well, and reading about all your food! I love this "everything-but-the-kitchen-sink" idea for lasagna. It's usually a food that you wouldn't associate with a throw-together meal and yet you've proved that it can be.

ReplyDeletethis looks pretty yummy! i am trying to not go to the sore right now except for milk,cheese and bread and boy am i fighting hard right now i want to go to bj's so bad i just love love that store lol but we are trying hard to save money and i spend way to much there!!!
