Date Night & Teacher's Fiesta

It's now Sunday morning, I am almost caught up with my google reader, again, and I am thoroughly enjoying a very lazy morning. Here is what the weekend has entailed thus far:


Friday morning started with a marathon cooking session of onions and peppers which, unfortunately took twice as long as anticipated.




It also made much more smell than anticipated. I thought opening the door would be good enough, not so much. I had all the doors open and it was still very stinky- maybe if we had something attached to this.....


Thursday night I made this Spicy Bean Salsa. So easy & so good!!



Spicy Bean Salsa
adapted from Allrecipies

Ingredients:
2 (15 ounce) can black beans, rinsed and
drained
1 (15 ounce) can whole kernel corn, drained
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 (4 ounce) can diced jalapeno peppers
1 (14.5 ounce) can diced tomatoes, drained
1 cup Italian-style salad dressing
1/2 teaspoon garlic salt


Directions:
In a medium bowl, combine black-eyed peas, black beans, corn, onion, green bell pepper, jalapeno peppers and tomatoes. Season with Italian-style salad dressing and garlic salt; mix well. Cover, and refrigerate overnight to blend flavors.

All this cooking was for the staff appreciation luncheon the PST puts on every year. The last couple years we have done a theme- southwestern and luau were the last two. This year was a fiesta. It is a ton of work, but very worth it- the teachers we have a great and totally deserve it!





I was planning to take a picture of the food too, but I forgot. We had the salsa, rice, spicy chicken tortilla soup, taco salad, jalapeno poppers, fajitas, churros, and frozen margaritas (non-alcoholic of course!).

Friday night we went with my brother & sister in law to the Newport Playhouse for dinner theater. They are friendly with the owners, and we got last minute seats that had opened up. We started the night with HUGE martini's and a good meal from their buffet. Before the show:


I did mention the martini's right? LOL!

Here are the boys with their new favorite actress. The play was Butterflies are Free. Apparently it was also a movie with Goldie Hawn in the 70's. The play is about a blind boy and his relationship with the neighbor girl- and a significant portion of the play she is dressed only in her underwear. Is there anything else to say???


After the show, they have an excellent cabaret. These people are so talented! After that, we went with them to karaoke, again, so talented! My parents had the kids for a sleepover, and we rented ourselves a hotel room- with a Jacuzzi! Woo- hoo! Saturday morning started not so hot- but we were only 1/2 hour late for Alyssa's game and it was all uphill from there.
